A perennial in our zone (7), Caraway is a member of the parsley family. Plants are 18 to 24 inches tall with finely divided, feathery leaves and umbels of white or pink flowers. Caraway fruits, or seeds, have a pungent, anise-like flavor and aroma. Seeds are used to give a distinctive flavor to rye bread, cabbage, pickles, soups, teas, and liqueurs. Young leaves can be used in salads while mature leaves can be eaten like spinach. Caraway seeds are a rich source of dietary fiber and are known to have antioxidant and digestive properties.
