Description

There are 55 lemongrass varieties that are called Cymbopogon but you can only eat two of them. The two that you can eat are East Indian lemongrass which is known as Cymbopogon Flexuosus (also known as Cochin or Malabar grass native to India, Thailand, and Sri Lanka) and West Indian lemongrass which is known as Cymbopogon Citratus which is native to Malaysia. Both can be used for cooking, but the thicker West Indian variety is better.

Care

Lemongrass loves the heat so full sun is ideal for their health. They are a clumping grass that thrives in heat, humidity, and abundant moisture. Because it is cold-sensitive, move container-grown plants indoors to a bright window before the first autumn frost. As a grass, it is a heavy nitrogen feeder. Apply a nitrogen-rich, balanced, water-soluble organic fertilizer every few weeks or a slow-release fertilizer early in the season. Best grown as perennial in zones 10-11 only.

Growth Habit
grass that forms dense, fountain-like clumps. It features gracefully arching, gray-green strap-like leaves and swollen, edible bases. The plant spreads outward via tight rhizomes and reaches roughly 3 to 5 feet in height and width.
Toxicity

While small, incidental bites usually cause only mild stomach upset, the plant contains cyanogenic glycosides and essential oils that can lead to vomiting, diarrhea, abdominal pain, and liver damage if ingested in large quantities. Considered deer resistant.
